Directions: Preparation Directions: You Will Need: 2 tablespoons margarine or butter; 1 package Essential Everyday Spanish Style Rice Mix; 1 (14.5 ounce) can diced or chopped tomatoes, undrained; 2-1/2 to 2-3/4 cups water. Stovetop: 1. In a large skillet over medium heat, melt 2 tablespoons margarine; add rice-vermicelli mix. Saute until vermicelli is golden brown; stirring frequently. 2. Stir in tomatoes, 2 cups water and seasoning packet; bring to a boil. 3. Cover; reduce heat and simmer 11-12 minutes or until all water is absorbed rice is tender. 4. Remove from heat; let stand 3-5 minutes to thicken. Fluff with fork before serving. Microwave Oven: 1. In a microwave-safe bowl; combine rice-vermicelli mix and 2 tablespoons margarine. Microwave (high) 1 minute; stir. Continue microwaving 2 minutes (microwave ovens vary; adjust cooking time accordingly) or until vermicelli is lightly brown. 2. Stir in tomatoes, 2-1/4 cups water and seasoning packet; continue microwaving 15-17 minutes (microwave ovens vary; adjust cooking time accordingly) or until all water is absorbed. 3.
