Goat Cheese Cheesecake Bites

Lighter than your traditional cheesecake – and way easier to make – these Goat Cheese Cheesecake Bites are the perfect addition to your holiday dessert spread.

  • Ingredients
    • ⅓ cup powdered sugar
    • ⅓ cup plain nonfat Greek yogurt
    • ½ tsp. vanilla extract
    • 2 oz. goat cheese, softened
    • 15 frozen mini phyllo shells, thawed
    • ½ cup fruit preserves (blueberry, strawberry, cherry)

    1. Combine powdered sugar, yogurt, vanilla extract and goat cheese in a medium bowl. Beat with an electric mixer at medium speed until smooth. 1. Spoon a heaping teaspoon of filling into each phyllo shell. Top filling with a teaspoon of fruit preserves.
