Goat Cheese Cheesecake Bites
- ⅓ cup powdered sugar
- ⅓ cup plain nonfat Greek yogurt
- ½ tsp. vanilla extract
- 2 oz. goat cheese, softened
- 15 frozen mini phyllo shells, thawed
- ½ cup fruit preserves (blueberry, strawberry, cherry)
Directions1. Combine powdered sugar, yogurt, vanilla extract and goat cheese in a medium bowl. Beat with an electric mixer at medium speed until smooth. 1. Spoon a heaping teaspoon of filling into each phyllo shell. Top filling with a teaspoon of fruit preserves.
