Simple Slow Cooker Pork Roast

Rustic potatoes simmer with hearty carrots, onions, and celery underneath a lean pork loin roast marinating with the roasting vegetable flavors (and a little help from a convenient packaged pork seasoning mix).

  • Ingredients
    • 1 lb. potatoes, cut into chunks
    • 1 cup baby carrots
    • 1 large onion, chopped
    • 4 celery stalks, chopped
    • 3 lbs. boneless pork loin roast
    • 1 package seasoning mix, prepared as directed

    1. Layer the potatoes, carrots, onion, and celery in the bottom of the slow cooker. Place the pork loin on top of the vegetables. 1. Prepare seasoning according to directions and add to slow cooker. 1. Cover and cook on low for 7-8 hours or until the pork is fork tender and internal temperature reaches a minimum of 145⁰F.
