Red, White & Blue Salsa
- 1 ¼ cup blueberries
- 1 ¼ cup diced strawberries
- 1 ¼ cup diced jicama
- ⅓ cup chopped cilantro
- ¼ cup finely chopped red onion
- 1 jalapeño pepper, seeded and finely chopped
- 1 lime, juiced
- Salt, to taste
Directions1. In a medium bowl, combine the blueberries, strawberries, jicama, cilantro, red onion, jalapeño and lime juice. Stir until well combined. Season with salt, to taste. 1. Serve with tortilla chips.
To keep the true red, white and blue colors of this salsa, wait to combine the strawberries with the remaining ingredients until just before serving. The red juice from the strawberries will tint the jicama pink as the salsa sits. This salsa is best eaten the day it’s made.
