Pork Chop, Sweet Potato and Brussels Sprout Sheet Pan Meal

When it comes to making meals for one, or for families, it doesn’t get much easier than sheet pan meals!

  • Pork Chop, Sweet Potato and Brussels Sprout Sheet Pan Meal
  • Ingredients
    • Cooking spray
    • 1 tsp. granulated sugar
    • 1 tsp. garlic powder
    • ½ tsp. ground allspice
    • ½ tsp. ground cumin
    • ¼ tsp. ground thyme
    • ¼ tsp. ground nutmeg
    • ¼ tsp. ground cinnamon
    • ⅛ tsp. ground red pepper
    • 4 (½-inch thick) bone-in pork chops or 4 boneless pork chops
    • 1 lb. Brussels sprouts, halved
    • ½ red onion, sliced
    • 2 large sweet potatoes, peeled and diced
    • 2 Tbsp. olive oil
    • Salt, to taste
    • Black pepper, to taste

    Directions
    1. Preheat oven to 425°F. Lightly coat a baking sheet with cooking spray. 1. Combine sugar, garlic powder, allspice, cumin, thyme, nutmeg, cinnamon and red pepper in a small bowl. Rub over pork and place on prepared baking sheet. 1. Place veggies on baking sheet. Drizzle with olive oil and sprinkle with remaining spice rub. Season with salt and pepper, to taste. 1. Bake for 20-22 minutes, turning pork chops halfway through cooking, or until internal temperature of the pork reaches 145°F and veggies are tender.
