On-the-Go Baked Oatmeal Bars

Customized to your taste and easy-to-make, these yummy, On-the-Go Baked Oatmeal Bars are the perfect, nutrition-packed snack or breakfast to grab and go.

  • Ingredients
    • Cooking spray
    • 1 ½ cups rolled oats
    • ½ cup chopped walnuts
    • ½ cup raisins
    • 2 Tbsp. sunflower seeds
    • 1 tsp. ground cinnamon
    • ¼ tsp. salt
    • 1 Tbsp. honey
    • 1 ¼ cups skim milk
    • 1 egg
    • 1 tsp. vanilla extract

    Directions
    1. Preheat oven to 350⁰F. Lightly coat a 9×9 baking pan with cooking spray. 1. Mix dry ingredients in a large bowl. Mix wet ingredients in a separate bowl. Add wet ingredients to dry and stir to combine. Pour into the prepared baking dish. 1. Bake in preheated oven for about 30 minutes, until the center is set and the edges are golden brown. Cool on a wire rack before cutting into bars.

    Chef's Tips

    Use almonds, pistachios, peanuts or other nuts in place of walnuts. Use dried currants, cranberries, dates, figs or other dried fruit in place of raisins. Use pumpkin seeds, flax seeds, millet or other seeds in place of sunflower seeds.


    Variations

    For dairy free: Use almond milk in place of skim milk. For gluten free: Use gluten free oats in place of rolled oats.
