Grilled Blueberry Peach Skillet Crumble
- 1 Tbsp. vanilla extract
- 2 (15 oz.) cans sliced peaches packed in 100% juice, drained
- 1 cup blueberries
- 1 cup old fashioned rolled oats
- ¾ cup pecans, chopped
- ⅓ cup almond meal
- ½ tsp. ground cinnamon
- ¼ tsp. salt
- ¼ cup melted butter
- ¼ cup maple syrup
Directions1. Preheat grill or oven to 375°F. In a medium bowl, add vanilla, sliced peaches and blueberries. Toss to coat. Spread fruit mixture evenly in a 10-inch skillet. Set aside. 1. In a medium bowl, stir together oats, pecans, almond meal, cinnamon, salt, melted butter and maple syrup. Spread topping evenly over berry mixture, lightly pressing it down. 1. Grill or bake for 35 to 40 minutes, or until the fruit mixture is bubbling and the top is lightly golden brown. Serve warm.
For gluten free: Use certified gluten free oats in place of old fashioned rolled oats. For dairy free or vegan: Use coconut oil in place of butter.
