Curried Waldorf Turkey Salad

This mix of sweet and savory flavors is great on bread, in a lettuce wrap or topped on a whole grain cracker.

  • Ingredients
    • ¼ cup plain nonfat Greek yogurt
    • 3 Tbsp. mayonnaise
    • 2 Tbsp. honey
    • 2 Tbsp. fresh lemon juice
    • 1 tsp. curry powder
    • ½ tsp. ground cumin
    • 2 Tbsp. canola oil
    • Salt, to taste
    • Black pepper, to taste
    • 2 cups cooked turkey breast, chopped or shredded
    • 1 Granny Smith apple, diced
    • 1 ½ cups celery, diced
    • ¼ cup raisins
    • ¼ cup walnuts, chopped
    • 1 cup endive, chopped

    Directions
    1. In a bowl, whisk together yogurt, mayonnaise, honey, lemon juice, curry powder, cumin, oil, salt and pepper. Taste and adjust seasoning, if necessary. 1. In a large salad bowl, combine turkey, apples, celery, raisins, walnuts and endive. Add dressing, toss together and serve.
