Tomato Basil Crostini
- 8 slices French baguette (¼ in. thick)
- 2 tsp. olive oil, divided
- Salt, to taste
- Black pepper, to taste
- 1 pint grape tomatoes, quartered
- 2 garlic cloves, minced
- 1 Tbsp. red wine vinegar
- ¼ cup fresh basil leaves, chopped
Directions1. Preheat oven to 350°F. Make crostini: Brush baguette slices on both sides with a total of 1 tsp. olive oil. Season with salt and pepper. Place on a baking sheet and bake for 10-12 minutes. 1. Meanwhile, mix tomatoes, garlic, 1 tsp. olive oil, vinegar and basil. Season with salt and pepper to taste. Divide topping evenly among each crostini and serve.
