Creamy Avocado Alfredo with Shrimp

With a simple sauce that can easily be whipped up while the pasta is cooking, this better-for-you alfredo will easily become a new weeknight favorite.

  • Creamy Avocado Alfredo with Shrimp
  • Ingredients
    • 9 oz. uncooked whole grain pasta
    • 2 cloves garlic
    • ΒΌ cup fresh basil
    • 1 Tbsp. lemon juice
    • 1 Tbsp. olive oil
    • 1 medium avocado, skin and pit removed
    • 1 Tbsp. water
    • Salt, to taste
    • Black pepper, to taste
    • 1 lb. medium cooked cocktail shrimp

    1. Bring a large pot of water to a boil. Cook pasta according to the package instructions. 1. Meanwhile, add garlic and basil to a food processor or blender. Pulse to mince. Add lemon juice, olive oil, avocado flesh, water, salt and pepper and process until smooth. 1. Before draining pasta, add shrimp. Drain immediately and return to pot. Add avocado sauce and stir to mix. Warm, if needed, over medium heat. Serve immediately.


    For gluten free: Use gluten free pasta in place of whole grain pasta.
