Coconut Brown Rice Pudding

  • Ingredients
    • 1 cup brown rice
    • 1 (13.5 oz.) can light coconut milk
    • 2 cups water
    • 2 Tbsp. maple syrup
    • 1 tsp. vanilla
    • 2 tsp. ground cinnamon
    • ½ cup raisins

    1. In a slow cooker, add rice, coconut milk, water, maple syrup and vanilla. Cook on low for 3 ½ hours or until liquid is absorbed. 1. Stir in cinnamon and raisins. Serve warm.
