Coconut Brown Rice Pudding
- 1 cup brown rice
- 1 (13.5 oz.) can light coconut milk
- 2 cups water
- 2 Tbsp. maple syrup
- 1 tsp. vanilla
- 2 tsp. ground cinnamon
- ½ cup raisins
Directions1. In a slow cooker, add rice, coconut milk, water, maple syrup and vanilla. Cook on low for 3 ½ hours or until liquid is absorbed. 1. Stir in cinnamon and raisins. Serve warm.
