Cheesy Chicken & Broccoli Pockets
- 1 cup frozen broccoli florets, cooked according to package directions
- ¾ cup shredded cheddar cheese
- ½ cup Braeburn or other sweet-tart apple, unpeeled, chopped small
- 2 oz. cooked chicken breast strips
- 2 whole wheat pita rounds, halved crosswise
- 2 tsp. olive oil
Directions1. Preheat a griddle, skillet or panini pan over medium heat. 1. Mix together broccoli, cheese, apple and chicken in a medium bowl. 1. Gently separate each pita half to form a pocket. Spoon ½ cup of the broccoli mixture into each of the pita halves. 1. Brush or wipe olive oil over the surface of the griddle using a brush or a paper towel. Add the pita halves, tucking in the filling. Grill for 2-4 minutes per side until golden, crisp and warmed throughout. Serve immediately.
