Cheesy Broccoli and Cauliflower Gratin
- 3 (12 oz.) packages Flav R Pac Broccoli & Cauliflower Blend
- ¼ cup olive oil, divided
- 2 large garlic cloves, minced
- ⅛ tsp. crushed red pepper
- 2 cups shredded sharp cheddar cheese, divided
- 1 cup plain bread crumbs
- Salt, to taste
- Black pepper, to taste
Directions1. Preheat oven to 400°F. 1. In a large skillet, cook broccoli and cauliflower until tender-crisp, about 5-7 minutes. Place in a bowl and set aside. 1. In the same skillet, heat 2 Tbsp. of the olive oil over medium heat. Add the garlic and crushed red pepper and cook until fragrant, about 1 minute. Remove pan from heat, add broccoli and cauliflower and 1 cup cheese and toss to combine. 1. Transfer vegetables to a baking dish and sprinkle with the remaining 1 cup cheese. 1. In a small bowl, toss the bread crumbs with the remaining 2 Tbsp. of olive oil. Season with salt and pepper if desired. Sprinkle the bread crumbs over the cheese. 1. Bake in the upper third of the oven until cheese is bubbling and crumbs are golden, about 12 minutes. Serve hot.
For gluten free: Use gluten free bread crumbs instead of standard bread crumbs.
