Black Bean & Corn Burgers
- 1 small yellow onion, quartered
- 1 clove garlic, minced
- 2 (15 oz.) cans cooked black beans, drained and rinsed
- 1½ tsp. ground cumin
- ½ tsp. smoked paprika
- 1 tsp. chili powder
- ¾ tsp. coarse salt
- Dash ground black pepper
- 1 large egg
- ¾ cup panko bread crumbs
- ¾ cup fresh or frozen corn kernels
- 6 whole wheat hamburger buns

Directions1. Preheat oven to 350°F. 1. Place onion, garlic, black beans, spices, egg and bread crumbs in a food processor. Puree until smooth, using a spatula to scrape the sides periodically. Transfer mixture to a mixing bowl and add corn 1. mix to combine. 1. Form mixture into 6 patties and place on a greased baking sheet. Bake for 35-45 minutes, flipping halfway, until bean patties are golden. (Note: If grilling or pan frying, refrigerate patties for 20 minutes beforehand.) 1. Place burgers on buns with desired toppings.
Top with lettuce, tomato, avocado and red onion.
For gluten free: Use gluten free bread crumbs instead of panko and gluten free hamburger buns instead of whole wheat.
