BBQ Pulled Pork with Pineapple Salsa
- 3-4 lb. boneless pork loin
- ½ tsp. salt
- ½ tsp. black pepper
- 1 bay leaf (optional)
- ½ cup water
- 1 pineapple, cored and diced
- ½ red onion, finely diced
- 1 bunch cilantro, roughly chopped
- Juice of 1 lime (about 2 Tbsp.)
- 1 cup barbeque sauce
Directions1. Preheat oven to 250°F. 1. Season pork roast with salt and pepper. Place in a stock pot with bay leaf and water. Place in oven and set timer for 5 hours. 1. While pork cooks, prepare salsa. Place pineapple, red onion, cilantro and lime in a bowl. Mix to combine. Place in refrigerator while pork cooks. 1. When pork is cooked, remove from oven. Drain the water and shred with tongs or 2 forks. Mix pork with the barbeque sauce. 1. Serve pork with pineapple salsa, either by itself or on a bun.
Cook the pork loin in a slow cooker instead of the oven by setting on low for 5 hours.
