BBQ Pulled Pork with Pineapple Salsa

Pineapple salsa gives a fun twist on the classic BBQ pulled pork. The combination of sweet and savory will have everyone begging for more!

  • BBQ Pulled Pork with Pineapple Salsa
  • Ingredients
    • 3-4 lb. boneless pork loin
    • ½ tsp. salt
    • ½ tsp. black pepper
    • 1 bay leaf (optional)
    • ½ cup water
    • 1 pineapple, cored and diced
    • ½ red onion, finely diced
    • 1 bunch cilantro, roughly chopped
    • Juice of 1 lime (about 2 Tbsp.)
    • 1 cup barbeque sauce

    Directions
    1. Preheat oven to 250°F. 1. Season pork roast with salt and pepper. Place in a stock pot with bay leaf and water. Place in oven and set timer for 5 hours. 1. While pork cooks, prepare salsa. Place pineapple, red onion, cilantro and lime in a bowl. Mix to combine. Place in refrigerator while pork cooks. 1. When pork is cooked, remove from oven. Drain the water and shred with tongs or 2 forks. Mix pork with the barbeque sauce. 1. Serve pork with pineapple salsa, either by itself or on a bun.

    Chef's Tips

    Cook the pork loin in a slow cooker instead of the oven by setting on low for 5 hours.
