Baked Banana Peanut Butter Oatmeal

  • Baked Banana Peanut Butter Oatmeal
  • Ingredients
    • 2 cups old fashioned oats
    • 1 tsp. baking powder
    • ¼ tsp. salt
    • 1 tsp. ground cinnamon
    • 1 cup milk
    • 1 large egg
    • 3 medium bananas, two mashed well with a fork and one sliced
    • ¼ cup natural peanut butter
    • ¼ cup maple syrup
    • 1 tsp. vanilla extract

    Directions
    1. Preheat your oven to 375°. Grease a medium sized casserole dish and set aside. 1. In a large bowl, combine the oats, baking powder, salt and cinnamon. Add the milk, egg, 2 mashed bananas, peanut butter, maple syrup and vanilla. Mix well. 1. Pour the mixture into the greased dish. Top with banana slices. 1. Bake for 20-25 minutes or until your desired consistency is reached.

    Variations

    For gluten free: Use certified gluten free oats instead of old fashioned rolled oats For dairy free: use non-dairy milk substitute of your choice instead of milk.
