Baked Banana Peanut Butter Oatmeal
- 2 cups old fashioned oats
- 1 tsp. baking powder
- ¼ tsp. salt
- 1 tsp. ground cinnamon
- 1 cup milk
- 1 large egg
- 3 medium bananas, two mashed well with a fork and one sliced
- ¼ cup natural peanut butter
- ¼ cup maple syrup
- 1 tsp. vanilla extract
Directions1. Preheat your oven to 375°. Grease a medium sized casserole dish and set aside. 1. In a large bowl, combine the oats, baking powder, salt and cinnamon. Add the milk, egg, 2 mashed bananas, peanut butter, maple syrup and vanilla. Mix well. 1. Pour the mixture into the greased dish. Top with banana slices. 1. Bake for 20-25 minutes or until your desired consistency is reached.
For gluten free: Use certified gluten free oats instead of old fashioned rolled oats For dairy free: use non-dairy milk substitute of your choice instead of milk.
