- 1 tsp. lime juice
- 8 slices whole wheat bread, toasted
- 4 sandwich-size lettuce leaves
- 8 slices cooked turkey bacon, cut in half width-wise
- 8 slices ripe tomato
Directions1. Slice one avocado in half, remove the pit, then slice into thin strips. Scoop out with a spoon and set slices aside. 1. Slice other avocado in half, remove the pit, and scoop out the flesh 1. place in a bowl. Mash the avocado with lime juice. 1. Spread the mashed avocado over half of the toast slices and top each with one lettuce leaf, four half-slices of bacon and two tomato slices. 1. Top the tomato with the reserved avocado slices and the remaining toast slices. 1. Cut each sandwich in half and serve immediately.
