Thaw shrimp if frozen, remove tails and place shrimp in a large bowl.
- 2
Add olive oil, 2 tbsp. tarragon, 1 tsp. salt, and 1/2 tsp. black pepper. Toss together until all of the shrimp are coated.
- 3
Place a medium sized pan over medium-high heat and add 2 tbsp. butter. While the pan is heating up, cut off the outside layer of the rolls. Slice rolls in the center, leaving the edge intact so the rolls resemble lobster roll buns. Once the butter is melted, add shrimp to pan in a even layer. Warm shrimp for about 1-2 minutes on each side. Remove the shrimp and allow to cool slightly.

While the shrimp are cooling, toast the buns using the pan the shrimp were warmed in. Toast the buns for about 1-2 minutes per side, or until golden brown.
- 5
Once the shrimp are cool enough to handle, place on a cutting board then chop into bite-size pieces and transfer to a medium-sized bowl.

For the dressing, you will combine 3 tbsp. melted butter, mayonnaise, green onion, 1 tbsp. tarragon, 1/2 tsp. salt, 1/4 tsp. black pepper, and lemon juice in a small bowl. Mix and pour over shrimp.

Divide the shrimp evenly between the toasted buns. Serve with lemon wedges and enjoy!
