Put a fresh spin on lunch this summer with Curried Waldorf Turkey Salad! This mix of sweet, savory and spicy flavors is great on bread, in a lettuce wrap, or topped on a whole grain cracker.

Curried Waldorf Turkey Salad

Ingredients:

Dressing:

  • ¼ cup plain nonfat Greek yogurt
  • 3 Tbsp. canola mayonnaise
  • 2 Tbsp. honey
  • 2 Tbsp. fresh lemon juice
  • 1 tsp. curry powder
  • ½ tsp. ground cumin
  • 2 Tbsp. walnut or grapeseed oil
  • Coarse salt and ground black pepper, to taste  

 

Salad:

  • 2 cups cooked turkey breast, chopped or shredded
  • 1 tart apple {such as granny smith}, diced
  • 1 ½ cups celery, diced
  • ¼ cup raisins
  • ¼ cup walnuts or pecans, chopped
  • 1 cup endive and radicchio, chopped {optional}  

 

Directions:

  1. In a bowl, whisk together yogurt, mayo, honey, lemon juice, curry powder, cumin, oil and salt and pepper. Taste and adjust seasoning, if necessary.
  2. In a large salad bowl, combine turkey, apples, celery, raisins, walnuts and endive/radicchio {if using}. Add dressing, toss together and serve.
