8-Ingredient-Chili1 We all love chili, right?  It’s simple, quick, hearty, delicious and pleases just about everyone.  Well, this chili recipe makes things even easier and tastier than ever {that doesn’t seem possible, but it’s true}!   It’s just 8 classic ingredients that we typically have at home, and can be ‘ready to eat’ in a matter of minutes.

I wasn’t lying about the 8 ingredients.  We have oil, onion, green pepper, ground turkey, spices and kidney beans; plus, the most unique and fun thing about this chili recipe is the V8® juice!  It provides a ton of flavor and extra servings of veggies {win/win}. 8-Ingredient-Chili2 Let’s get this kitchen smelling fantastic!  First, heat the oil in a stock pot to medium-high.  Add the chopped onion and green bell pepper and let saute for 3-4 minutes, until softened.  Add the ground turkey and cook until browned, then add the seasonings. 8-Ingredient-Chili3 Add the vegetable juice and beans and bring to a boil.  Reduce the heat and simmer for at least 15 minutes.  The longer it cooks, the more the chili flavor will develop!  I like to add a little salt and pepper to boost the tomato-ey flavor.

Top the chili with cheese, plain Greek yogurt and scallions {or your favorite toppings} and dig in! 8-Ingredient-Chili4

8-Ingredient Chili

Ingredients:

1 Tbsp. canola oil

1 large onion, chopped (about 1 cup)

1 medium green bell pepper, chopped (about ¾ cup)

1 ¼ lbs. ground turkey (or ground beef)

2-3 Tbsp. chili powder

2 tsp. ground cumin

3 ½ cups V8® 100% Vegetable Juice or Low Sodium V8®

2 (15 oz.) cans kidney beans, rinsed and drained

Salt and black pepper, to taste  

Directions:

  1. Heat oil in a stock pot to medium-high heat. Add onion and bell pepper and sauté until starting to brown, about 3-4 minutes.  Add the turkey and cook until browned, stirring often.  Season with chili powder and cumin.
  2. Add the vegetable juice and beans to the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 15 minutes. Taste and season with salt and pepper.
