Easy Fajita Grill Packets

Foil packet meals are an easy way to get dinner on the table fast. We simply tossed together sliced veggies with sliced chicken, hearty black beans, convenient frozen corn, and a dash of pre-made taco seasoning. Seal it all up, grill for fifteen minutes, and you have a simple yet delicious dinner ready to go.

  • Ingredients
    • ½ lb. boneless, skinless chicken breast
    • 1 (15 oz.) can no salt added black beans, drained
    • 1 cup frozen corn kernels
    • 1 cup bell peppers, sliced
    • 1 cup red onion, sliced
    • 1 (1.25 oz.) package taco seasoning
    • Cooking spray

    Directions
    1. Thinly slice thawed chicken breast into strips. Place in a large bowl. 1. To the chicken, add drained black beans, frozen corn, sliced vegetables and entire package of taco seasoning. Mix well to combine. 1. Evenly divide mixture between four sheets of aluminum foil that have been lightly coated with cooking spray. 1. Fold package shut and cook over medium heat on a grill for 10-15 minutes or until chicken reaches internal temperature of 165°F.

    Serve fajitas in tortillas or over a bed of rice.
