Fiesta Fish Tacos

Fun and flavorful, these Fiesta Fish Tacos come together in just minutes.

    • Cooking spray
    • 1 lb. tilapia fillets
    • 8 corn tortillas
    • 1 cup black beans, drained and rinsed
    • 1 cup canned corn, drained and rinsed
    • 1 ½ Tbsp. taco seasoning
    • ¼ cup shredded cheddar cheese

    1. Preheat oven to 375°F. Line a baking sheet with foil and spray with cooking spray. 1. Arrange tilapia fillets in a single layer on the prepared baking sheet and sprinkle evenly with taco seasoning. Bake tilapia for 10-15 minutes, or until the internal temperature reaches 145°F. 1. Place fully cooked tilapia inside warmed corn tortillas. 1. Top tacos with black beans, corn and shredded cheese.
