Cinnamon Streusel Pumpkin Coffee Cake with Cream Cheese Glaze

  • Ingredients
    • Cooking spray
    • ½ cup + 2 Tbsp. salted butter, almost melted and divided
    • ½ cup + 3 Tbsp. packed brown sugar, divided
    • 1 (15 oz.) can pumpkin puree
    • 3 large eggs
    • 1 ¼ cups whole wheat flour
    • 1 ¼ cups + 3 Tbsp. all purpose flour, divided
    • 2 tsp. baking powder
    • ½ tsp. salt
    • 2 tsp. cinnamon, divided
    • 1 tsp. ground ginger
    • 1 tsp. allspice
    • 1 tsp. nutmeg
    • 1 tsp. ground cloves
    • 3 Tbsp. granulated sugar
    • 4 oz. cream cheese, at room temperature
    • 1 tsp. vanilla extract
    • 4 Tbsp. milk
    • ⅓ cup powdered sugar

    Directions
    1. Preheat the oven to 350°F. Spray a 9x9" baking dish with cooking spray. 1. Mix ½ cup butter, ½ cup brown sugar, pumpkin and eggs together with an electric mixer until smooth. Add 1 ¼ cup all purpose flour, 1 ¼ cup whole wheat flour, baking powder, salt and 1 tsp. each of cinnamon, ginger, allspice, nutmeg and cloves. Mix until just combined and pour into the prepared baking dish. 1. For the topping, mix the remaining 3 Tbsp. flour, granulated sugar, remaining 3 Tbsp. brown sugar, remaining 1 tsp. cinnamon and 1 Tbsp. butter together until a crumble consistency forms. Sprinkle over the top of the cake. Bake for 45 minutes or until a toothpick inserted into the center comes out clean. 1. For the glaze, mix the cream cheese and 1 Tbsp. butter together with an electric mixer until smooth. Add the vanilla and milk and mix until smooth. Gradually add in the powdered sugar and mix until smooth. 1. Drizzle glaze over the cake and serve warm.
