Sweet and Spicy Breakfast Sandwich
- ¼ cup butter, softened
- 2 tsp. hot sauce
- 2 tsp. pure maple syrup
- 4 cinnamon raisin bagel thins, sliced in half
- 8 fully cooked turkey sausage patties, warmed
- 4 eggs, cooked as desired
- 4 oz. shredded cheddar cheese
- 4 oz. baby spinach
Directions1. Preheat oven to 350°F. 1. In a small bowl, whisk together butter, hot sauce and maple syrup. Set aside. 1. Place bagels onto baking sheet, cut side up. Bake 5 minutes or until lightly toasted. 1. Spread cut sides of four bagel halves with butter mixture. Top bottom half of bagels with cooked sausage patty, egg, cheese and spinach. Bake 2-3 minutes or until cheese is melted. Top with top half of bagel, cut-side down.
Cook sandwich-sized eggs together in a muffin tin! Simply spray a muffin tin with nonstick cooking spray, crack an egg into each cup and season with salt and pepper. Bake for 17 minutes at 350°F, and you have perfectly-sized eggs ready for a week’s worth of breakfast sandwiches! Make sandwiches ahead of time and wrap in wax paper. Store in an airtight container and freeze for grab and go ease during the week! To reheat: simply wrap the sandwich in a damp paper towel and microwave 2-3 minutes, or until sandwich is heated through.
For gluten free: Use gluten free bagels instead of plain bagel thins.
