Chili-Rubbed Pork & Pineapple Kabobs
- 4 (6 oz.) boneless pork chops, trimmed of fat and cubed
- 1 Tbsp. canola oil
- 3 Tbsp. chili powder
- ½ tsp. coarse salt
- ¼ tsp. black pepper
- 1 whole pineapple, peeled and cubed
- ½ cup fresh cilantro, chopped
- Juice of 1 small lime
Directions1. Preheat grill to medium-high heat. 1. In a bowl, combine pork, oil, chili powder, salt and pepper and toss to combine. 1. Thread marinated pork cubes and pineapple on skewers. Grill the kabobs, turning every 2 minutes, until cooked through, about 15 minutes total. 1. Sprinkle kabobs with fresh cilantro and lime juice.
