Who doesn’t love a colorful, delicious and better-for-you French fry? Except, today’s fries don’t feature traditional potatoes. Instead, they’re made with the just-as-tasty root vegetables, carrots and parsnips. When roasted, the natural sugars in these veggies start to caramelize which creates a perfect, slightly sweet and savory combination that is out-of-this-world good. Pair this easy side with any kind of burger or grilled meat; or serve these fries with baked fish for a better-for-you fish fry!
For a quick and simple dip, try mixing nonfat plain Greek yogurt with your favorite dried herbs and spices, like garlic powder, dill or parsley.
Sweets, Snacks & Sides:
- ¼ cup extra virgin olive oil
- ½ tsp. garlic powder
- ½ tsp. salt
- ½ tsp. dried rosemary
- 1 lb. parsnips and/or rutabagas, peeled and cut into thick strips
- 1 lb. carrots, peeled and cut into thick strips
- Preheat oven to 450°F.
- In a large mixing bowl, whisk together olive oil, garlic powder, salt and rosemary. Add parsnip and carrot strips and toss to coat.
- Spread vegetable strips into a single layer onto two large baking sheets. Bake for 40-50 minutes, turning frequently until golden brown and cooked throughout. Serve warm.
