Strawberry & Goat Cheese Farro Salad | Eat Well with Festival Foods Welcome the warm weather with this unique and exciting Strawberry and Goat Cheese Farro Salad! It’s full of fresh and summery flavors like sweet strawberries, creamy goat cheese and refreshing mint.

Strawberry & Goat Cheese Farro Salad

Ingredients:
1 ½ cups farro, rinsed and drained
4 ½ cups unsalted chicken stock
½ cup fresh orange juice (from 2 oranges)
⅓ cup extra-virgin olive oil
2 Tbsp. orange zest (from 1 large orange)
2 Tbsp. honey
¼ cup fresh mint leaves, packed, finely chopped
1 tsp. kosher salt
½ tsp. freshly ground black pepper 10 medium strawberries, hulled and quartered
⅓ cup crumbled goat cheese
½ cup chopped walnuts, toasted  

Directions:

  1. In a 1 ½-quart saucepan, cook the farro in the chicken broth, covered, for 20-30 minutes or until the farro is tender but chewy and the liquid is absorbed. Transfer to a salad bowl.
  2. Meanwhile, in a medium bowl, whisk together orange juice, olive oil, orange zest, honey, mint leaves, salt, and pepper until smooth. Pour the dressing over the farro and add the strawberries, goat cheese, and walnuts. Toss until all the ingredients are coated and serve cold.
