Specialty cheese is like taking an adventure to a new and wonderful place! I really enjoy making platters for guests coming over for cocktails before dining out or before a nice dinner at home. Everyone I know loves cheese! If you are a beginner with specialty cheeses, I would recommend starting with a caprese tray which consists of fresh mozzarella, roma tomatoes, and fresh basil. It’s so easy and quick to prepare! And its flavor is mild and approachable. When you serve your caprese tray with a warm sliced baguette, you will feel as though you’ve gone to Europe and back! There are many other delicious and simple ways to prepare specialty cheeses as well. Using the fresh BelGioioso Mozzarella Unwrap and Rolls you can create a pinwheel platter that will impress any guest! Just layer the cheese with your favorite combination of flavors from chopped artichoke hearts, roasted red peppers, and pesto to shaved roast beef and horseradish sauce! Also, using specialty cheeses for hot dips makes for a very unique and memorable appetizer. Cheeses like Jarlsberg or Gruyere have a wonderful Swiss cheese flavor that can only come from premium products. Serve your hot, melty cheese with garlic toast points or a gourmet cracker such as 34 Degrees found in our Deli Department. Try a new specialty cheese this week! You’ll feel so adventurous! Recipes:   Caprese Tray Use fresh sliced mozzarella, sliced roma tomatoes, and fresh basil. Make a tray by alternating products. Just before serving, sprinkle with fresh ground pepper and sea salt and drizzle with extra virgin olive oil. BelGioioso Unwrap & Roll Idea Unwrap the mozzarella sheet. Top the mozzarella wrap with any cheese spread (SKS cheese spreads work great), and top with any sliced cooked meat (turkey, ham, roast beef, pastrami, etc.). Add spring mix lettuce or baby spinach, sprouts, tomatoes, etc. Roll tightly, insert toothpicks to hold product in place, then slice. Jarlsberg Cheese Spread 2 cups Jarlsberg cheese, shredded 2 cups onion, grated 2 cups mayonnaise Mix all ingredients and place in an oven-proof dish. Bake in a 375º F oven uncovered for 20 minutes. Serve with crackers or baguette bread. Variations:

  • Add ½ cup of artichoke heart quarters
  • Add ½ cup roasted tomatoes
  • Add ½ cup pitted kalamata olives, chopped
Grand Cru Gruyere Spread 1 cup Grand Cru Gruyere, shredded 1 cup chopped walnuts 1 package cream cheese Combine all ingredients. Place in plastic wrap and roll into a log. Chill 45 minutes before serving.
