Pork Chop, Sweet Potato and Brussels Sprout Sheet Pan Meal

When it comes to making meals for one, or for families, it doesn’t get much easier than sheet pan meals. This version uses our pork spice rub on juicy thick-cut pork chops, paired with fresh sweet potatoes, red onions and Brussels sprouts for a colorful and flavorful roasted meal.

Pork Chop, Sweet Potato and Brussels Sprout Sheet Pan Meal

Pork Chop, Sweet Potato and Brussels Sprout Sheet Pan Meal

Ingredients:

1 tsp. sugar

1 tsp. garlic powder

½ tsp. ground allspice

½ tsp. ground cumin

¼ tsp. ground thyme

¼ tsp. ground nutmeg

¼ tsp. ground cinnamon

⅛ tsp. ground red pepper

4 (½-inch thick) bone-in pork chops, or 4 boneless pork chops

1 lb. Brussels sprouts, halved

½ red onion, sliced

2 large sweet potatoes, peeled and diced

2 Tbsp. olive oil

Salt & pepper, to taste

Directions:

  1. Preheat oven to 425°. Lightly coat a baking sheet with nonstick cooking spray.
  2. Combine first eight ingredients; rub over pork. Place on prepared baking sheet.
  3. Place veggies on baking sheet. Drizzle with olive oil and sprinkle with remaining spice rub. Season with salt and pepper, to taste.
  4. Bake for 20-22 minutes, or until internal temperature of the pork reaches 145°, and veggies are tender. Turn the chops halfway through cooking to ensure they cook evenly.
