Love popcorn? Try popped sorghum for a fun, World to Table twist! Like popcorn, sorghum is a whole grain that can be popped into a delicious and nutritious snack, but unlike the traditional movie treat, this Indian grain pops into teeny tiny kernels. It has a slightly nutty taste and is packed with beneficial nutrients like plant-based protein, iron and zinc. Sorghum also happens to be naturally gluten free!

- 2 Tbsp. canola oil (or other cooking oil)
- ¼ cup whole grain sorghum
- Salt, to taste
- Heat the oil in a large pot over medium-high heat. Once the oil is hot, add sorghum grains. Protecting your skin with an oven mitt, constantly stir sorghum with a heat-resistant spoon until roughly 75% of the grains are popped (see note), about 2-4 minutes.
- Remove popped sorghum from heat and season to taste with salt. Serve warm or cool and store in an airtight container.
Yield: 2 servings
Note: Not all of the grains will pop.
