I was born and raised in Wisconsin but have never really been a cheese lover--bet you don’t hear that every day! The truth is that I love pizza and can’t pass up a good taco filled with cheese, but snacking on chunks of cheese is not something I’ve done. That changed recently as I began to appreciate the great cheeses that are made right here in Wisconsin. I had the opportunity to tour the BelGioioso Cheese facility in Denmark, Wisconsin twice in the last month and what an operation they have! Errico Auricchio, the founder of BelGioioso, immigrated to America in 1979 from Italy and has more passion for cheese than anyone I know. Errico has such enthusiasm for Italian cheeses that he uses imported manufacturing equipment directly from Italy, allowing him to create products right here that rival the quality and aging process of those made across the ocean. Since their inception, BelGioioso has earned dozens of awards at the World Champion Cheese Contest--including a first place finish in the categories of Parmesan and Mascarpone this year. Following that up with a third place finish in both the Gorgonzola and Provolone categories isn’t too shabby either.
