Korean Beef Zucchini Noodles

Savory with just a touch of sweetness, these Korean Beef Zoodles are the perfect veggie-packed meal. It comes together in minutes and will have the entire family begging for more!

Korean Beef Zucchini Noodles

Ingredients:

  • ⅓ cup brown sugar, packed
  • ⅓ cup reduced sodium soy sauce (or tamari for gluten free)
  • 1 Tbsp. freshly grated ginger
  • 1 Tbsp. sesame oil
  • 1 tsp. sriracha
  • 1 tsp. canola oil
  • 4 cloves garlic, minced
  • ¾ lb. 90% lean ground beef
  • 2 (10 oz.) packages zucchini noodles
  • 2 green onions, thinly sliced
  • Sesame seeds for garnish, optional

Directions:

  1. In a small bowl, whisk together brown sugar, soy sauce, ginger, sesame oil and sriracha. Set aside. 
  2. Heat canola oil in a large pan over medium-high heat. Add garlic and cook, stirring constantly, until fragrant, about 1 minute. Add ground beef and cook until browned, about 3-5 minutes. 
  3. Stir in zucchini noodles, green onions and sauce mixture. Gently mix until well combined; allow to cook until zucchini noodles are tender-crisp, about 1-2 minutes. 
  4. Serve immediately; garnish with sesame seeds, if desired.
