2 ways to try the Towering Pork Chop

This Towering Pork Chop is truly a meat masterpiece! The thick cut of meat is absolutely tender, juicy, and melt-in-your-mouth delicious. Just like our Towering T-Bone, it is cooked standing up. Honestly, if you are looking to impress, or just love pork, this is the cut of meat to beat them all!

With it being winter in Wisconsin, we thought you might appreciate oven instructions. We had fun testing out a few ways to cook this large cut of meat so you get the best oven result without the guesswork! Those of you who grill all year round, don’t worry, we also have grilling instructions.

Towering Pork Chop Oven Cooking Instructions

Ingredients:

  • 1 Towering Pork Chop from our meat department
  • 1 tsp. olive oil
  • Cooking spray
  • Favorite seasoning (we recommend one of our Salt-Free Spice Rubs)  

Directions:

  1. Heat 1 tsp. olive oil in a large nonstick skillet over medium-high heat. Pat pork chop dry and sprinkle evenly with your favorite seasoning or rub. Add pork to hot pan; sear pork chop on all sides (about 1 minute per side). Use a tongs to transfer pork from the skillet to the prepared baking sheet standing up with bone side down.
  2. Cook for 45 minutes or until thermometer, inserted into the thickest part of the meat and not touching the bone, registers 140°F. Because the pork is cooking standing up, you do not need to flip it! Remove from oven and let pork rest for 10 minutes or until internal temperature reaches 145°F. 
  3. Transfer pork with tongs to a cutting board, carve pork chop standing up, cutting across the grain and serve.*
  4. Place pork on a plate and set on counter until it reaches room temperature. Preheat oven to 400°F and lightly coat a baking sheet with nonstick cooking spray. 

Note: Waiting until the meat is room temperature reduces overall cooking time and searing it reduces oven cooking time. If you want, you can skip either or both of these steps, but you will need to cook the pork longer (15-30 minutes).

Towering Pork Chop Grilling Instructions

Ingredients:

  • 1 Towering Pork Chop from our meat department
  • Favorite seasoning (we recommend one of our Salt-Free Spice Rubs)  

Directions:

  1. Place pork on grill over indirect heat, standing the chop on it's side, spine bone down.
  2. Cover grill and let roast for about 45 minutes, occasionally checking the internal cooking temperature to prevent overc0oking.
  3. Remove from heat when internal temperature reaches 140°F or your preferred cook temperature. Remove from grill and let pork rest for 10 minutes or until internal temperature reaches 145°F. 
  4. Transfer pork with tongs to a cutting board, carve pork chop standing up, cutting across the grain and serve.*
