Instant Pot Italian Beef Sandwiches

This Chicago staple is usually a labor of love - long hours of simmering resulting in melt-in-your-mouth beef. We've slashed the cook time, but kept all the flavor and love in this succulent sandwich. These easy Instant Pot Italian Beef Sandwiches are sure to be a crowd-pleaser!

Instant Pot Italian Beef Sandwiches

Ingredients:

For the beef:

  • 2 tsp. dried oregano
  • 1 tsp. dried basil
  • 1 tsp. onion powder
  • 1 tsp. paprika
  • ½ tsp. dried rosemary
  • ½ tsp. dried thyme
  • ½ tsp. garlic powder
  • Salt and pepper, to taste
  • 3 lbs. beef chuck roast
  • 1 tsp. olive oil
  • 1 small onion, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups unsalted beef broth

For the green peppers:

  • 1 tsp. olive oil
  • 2 medium green bell peppers, sliced
  • Salt and pepper, to taste

For the sandwiches:

  • 10 (6-inch) crusty sandwich buns or rolls
  • 10 slices provolone cheese
  • Giardiniera or pepperoncini peppers, optional 

Directions:

  1. Place the oregano, basil, onion powder, paprika, rosemary, thyme, garlic powder, salt and pepper in a small bowl and whisk to combine. 
  2. Cut beef roast into 2-inch pieces. Place beef in a large bowl and sprinkle with the spice mixture. Toss to combine. 
  3. Set the Instant Pot to the "Sauté" setting. Heat 1 Tbsp. olive oil until shimmering. Add onions and sauté for 2 minutes, or until tender. Add garlic and sauté for an additional minute. 
  4. Add beef and beef broth and stir to combine. 
  5. Close lid, turn vent to "Sealing", select the "Manual" setting and set time to 35 minutes. 
  6. While beef is cooking, sauté the green peppers. Heat oil in a large skillet over medium-high heat. Add the bell peppers and sauté until tender, 8-10 minutes. Season with salt and pepper, to taste. Remove from heat and set aside. 
  7. Once the Instant Pot cooking cycle is complete, allow the pressure to release naturally for 20 minutes. After 20 minutes, use the quick release method to release any remaining pressure. 
  8. Transfer beef to a large bowl and shred with two forks. Return shredded beef to Instant Pot. 
  9. To assemble the sandwiches: Split the rolls in half. Fill with cheese slices and shredded beef. Top with sautéed peppers, giardiniera and pepperoncini, if desired. 
  10. Serve sandwiches with small bowls of cooking liquid for dunking.  

    
Slow Cooker Directions:

  1. Place the oregano, basil, onion powder, paprika, rosemary, thyme, garlic powder, salt and pepper in a small bowl and whisk to combine. 
  2. Place beef in slow cooker insert and sprinkle evenly with spice mixture. Top with olive oil, onion, garlic and broth. 
  3. Cover and cook on low for 9-11 hours, or until meat is tender. 
  4. When beef reaches the end of its cooking time, sauté the green peppers. Heat oil in a large skillet over medium-high heat. Add the bell peppers and sauté until tender, 8-10 minutes. Season with salt and pepper, to taste. Remove from heat and set aside. 
  5. Once beef is cooked, shred with two forks.
  6. To assemble the sandwiches: Split the rolls in half. Fill with cheese slices and shredded beef. Top with sautéed peppers, giardiniera and pepperoncini, if desired. 
  7. Serve sandwiches with small bowls of cooking liquid for dunking.
