Grilled Blueberry Peach Skillet Crumble

                                                                                                       

Ingredients:

Fruit Mixture:

  • 1 Tbsp. vanilla
  • 2 (15 oz.) cans sliced peaches packed in 100% juice, drained
  • 1 cup blueberries

 

Crumble:

  • 1 cup oats (use certified gluten free oats for gluten free)
  • ¾ cup pecans, chopped
  • cup almond meal
  • ½ tsp. cinnamon
  • ¼ tsp. salt
  • ¼ cup melted butter (or coconut oil for dairy free or vegan)
  • ¼ cup maple syrup

 

Directions:

  1. Preheat grill or oven to 375°F. In a medium bowl, add vanilla, sliced peaches and blueberries; toss to coat. Spread fruit mixture evenly in a 10-inch skillet. Set aside.
  1. In a medium bowl, stir together oats, pecans, almond meal, cinnamon, salt, melted butter and maple syrup. Spread topping evenly over berry mixture; lightly pressing it down.
  1. Grill or bake for 35 to 40 minutes, until the fruit mixture is bubbling and the top is lightly golden brown. Serve warm.
