Eat Well Wednesday: Watermelon Feta Salad

watermelon fetaDo you ever find yourself in a food rut? Eating the same foods in the same way over and over again? I know I certainly do which is exactly why I chose Watermelon Feta Salad for this week’s recipe! This recipe is a perfect example of how this favorite fruit can be transformed from a standalone snack to a sweet and savory side dish! And why not?! Something that is so delicious and good for you should be included in your diet many different ways! Loaded with Vitamins A & C as well as lycopene, an antioxidant compound that gives the melon its bright red color, it rings in at just 40 calories per cup. It’s also a great way to help stay hydrated during the summer months due to its high water content (watermelon is 92% water)! I hope today’s recipe gives you just the inspiration you need to transform this traditional treat into something new and exciting at your next meal!
