This recipe is a perfect example of how this favorite fruit can be transformed from a standalone snack to a sweet and savory side dish! And why not?! Something that is so delicious and good for you should be included in your diet many different ways! Loaded with Vitamins A & C as well as lycopene, an antioxidant compound that gives the melon its bright red color, it rings in at just 40 calories per cup. It’s also a great way to help stay hydrated during the summer months due to its high water content (watermelon is 92% water)! I hope today’s recipe gives you just the inspiration you need to transform this traditional treat into something new and exciting at your next meal!
Watermelon Feta Salad
6 cups cubed watermelon
1 cup crumbled feta cheese
¼ cup thinly sliced red onion
¼ cup chopped fresh mint
¼ cup fresh lime juice
1 Tbsp. canola oil
- Combine watermelon, red onion, and mint in a large bowl.
- Pour the lime juice and olive oil over the watermelon mixture and toss lightly to coat. Add feta cheese and toss gently.
- Serve immediately.
