Every once in a while I need a good taco fix.  Something about the combination of spicy ground meat, melted cheese, and fresh vegetables all wrapped up in a soft, warm tortilla speaks to my heart (and my stomach!).  Although tacos traditionally aren’t a dietitian’s dream food, this week we have a recipe from Jennie-O that will allow you to get your taco fix and still feel good about what you’re eating!  Using NuVal scores, we’ve traded-up from traditional taco ingredients to more nutritious ones.  Instead of using a higher fat ground beef (85/15 ground beef gets a NuVal score of 28) we’re using Jennie-O Lean Ground Turkey (93/7), which scores a 33!  Also, we’ve ditched the taco seasoning packet that’s loaded with sodium, and instead we’re seasoning our ground turkey with a combination of fresh onion and garlic, flavorful spices, and high scoring salsa.  Rather than wrapping your taco in a white tortilla, serve your taco meat and fixings in a healthier tortilla like the corn or whole wheat varieties mentioned below.  Lightly sprinkle with cheese and load on the veggies, and you’ve got one tasty taco that’s definitely not lacking in nutrition! Easy Turkey Tacos

Ingredients:

1 pkg. Jennie-O Turkey Store® Lean Ground Turkey

1/3 cup chopped onion

2 tsp. chili powder

1 tsp. ground cumin

2 tsp. minced fresh garlic (about 4 cloves)

¼ tsp. salt

¾ cup picante sauce or salsa

Tortillas/taco shells

Addition desired toppings:

Shredded cheddar cheese

Romaine lettuce, chopped

Fresh tomato, diced

Fresh avocado, diced

Hot sauce

Directions Crumble turkey in a large nonstick skillet; add onion, chili powder, cumin, garlic, and salt.  Cook turkey as specified on the package.  Always cook to well-done, 165°F as measured by a meat thermometer.  Stir salsa or picante sauce into thoroughly cooked turkey; heat through.  Spoon meat mixture into tortillas/taco shells; sprinkle lightly with cheese.  Serve with desired vegetable toppings.
