Weekdays can get pretty hectic, and the thought of putting a meal on the table that takes hours to prepare just doesn’t appeal to most people. After a long day, we all want to come home and have dinner ready without too much fuss (or clean-up afterward!) Our solution on this Eat Well Wednesday: Stir-fry! Quick cooking and loaded with healthy ingredients, stir fry is the perfect midweek meal. Simply prep your meat and vegetables the night before (or use up some of those leftover veggies from the crisper drawer in your fridge!), and then the next evening all you have to do is heat your wok and start cooking. In 15 minutes you’ll have dinner on the table! Not only are stir fry recipes fast and easy to make, but they’re generally a healthy, well balanced meal as well. Use some of your favorite vegetables like broccoli, onions, and carrots, or try experimenting with veggies that may be new to you or are currently in season. Include some lean protein like Certified Angus Beef top sirloin steak or Dad’s Plain Chicken Breast, and voila… dinner is ready! Serve your stir fry over a bed of hot, cooked whole grains, like Minute® Rice brown rice, and you’ll make a lot of tummies happy!
Orange Ginger Beef Stir-Fry
Makes 4 Servings

¾ cup Minute Maid® Orange Juice plus Calcium & Vitamin D
3 Tbsp. Kikkoman® Less Sodium Soy Sauce
2 tsp. McCormick® Ground Ginger
2 cloves fresh garlic, minced
1 lb. boneless Certified Angus Beef top sirloin steak (can substitute Dad’s Plain Chicken Breast)
1 Tbsp. sesame oil
5 cups cut-up vegetables, such as broccoli florets, sliced onion, and mushrooms
1 Tbsp. honey
1 tsp. cornstarch
Directions 1. Mix orange juice, soy sauce, ginger, and garlic in small bowl. Reserve 1/2 of the marinade. Place thinly sliced beef or chicken in large re-sealable plastic bag or glass dish. Add remaining marinade; turn to coat well. Refrigerate 15 minutes or longer for extra flavor. 2. Heat oil in large skillet on high heat. Remove beef (or chicken) from marinade. Add meat to skillet; stir fry 3-5 minutes or until thoroughly cooked. Remove meat from skillet. Add vegetables; stir fry 3 to 5 minutes or until tender-crisp. 3. Mix reserved marinade with honey and cornstarch until smooth. Stir into skillet. Stirring constantly, bring to boil on medium heat and boil 1 minute. Return meat to skillet. Cook until heated through. Serve over hot cooked Minute® Rice brown rice, if desired.
