In the spirit of Halloween, which is just around the corner, we’re serving up some ghoulish green Avocado Mashed Potatoes in today’s Eat Well Wednesday recipe. Kids love mashed potatoes, especially when they’re a fun color! For a healthier twist on a time-honored favorite, we’re mixing in some mild-flavored, creamy avocado instead. Avocados are rich in heart-healthy monounsaturated fat, and they add a fun green hue to your spuds. Plus, this week is our stuffed meat sale (featuring stuffed salmon, chicken breasts, beef tenderloins, pork chops and more), and nothing goes better with roasted meat than a side of creamy mashed potatoes!
Avocado Mashed Potatoes
1 ½ lb. russet potatoes
2 ripe medium avocados
1 tsp. lemon juice
½ cup skim milk, warmed
Salt, pepper, and garlic powder to taste
- Peel and quarter potatoes and place them in a large pot; cover with cold, lightly salted water and boil.
- Just before potatoes are finished, prepare the avocados. Scoop avocado flesh into a bowl (removing any brown flesh) and stir together with lemon juice until smooth.
- Once potatoes are cooked until fork tender, drain. Mash potatoes by hand or with a hand mixer, slowly adding the warmed milk. When potatoes are mashed or whipped to your liking, gently blend in avocado mixture and season to taste with salt, pepper and garlic powder.
