Eat Well Wednesday: Get on the Boat, the Zucchini Boat!

Are you looking for a way to jazz up dinner now that summer is (unofficially) over? This recipe for stuffed zucchini boats might be just what you are looking for! They are fun way to add some extra veggies to your dinner plate, and this recipe from StarKist® obviously incorporates tuna which makes it a little different from a typical stuffed zucchini recipe. Using tuna as the protein source also adds heart-healthy fats to the recipe. A 5oz. can of StarKist® Chunk White Tuna contains the essential fatty acids EPA and DHA, more commonly referred to as Omega-3’s (approximately 240mg/container of EPA and DHA combined, which covers the recommended 160mg Daily Value for a combination of EPA and DHA). It’s important that we get enough Omega 3’s in our diet because our bodies cannot produce these “essential” fats and we need them for proper health. Omega-3’s promote cardiovascular health, the body's natural anti-inflammatory response, brain and cognitive function, and joint mobility.

Zucchini Boats with Tuna and Vegetables


1 can (5 oz.) Starkist® Chunk White Tuna

2 large zucchini, sliced in half length-wise and hollowed out (insides of one reserved)

¼ cup Green Giant® Baby Carrots, chopped

½ red onion, chopped

1 red pepper, diced

1 can diced tomatoes

½ cup Sargento® Shredded Cheddar Cheese

Italian seasoning, optional


  1. Preheat oven to 375°F.
  2. Dice the inside of one zucchini and place in a medium bowl. Add tuna, carrots, onion, pepper, tomatoes, and Italian seasoning and mix well.
  3. Place hollowed out zucchini in a large baking dish. Place ¼ of tuna and vegetable mixture in each zucchini half to stuff it.
  4. Bake in preheated oven for 25 minutes. Top with 2Tbsp. shredded cheese and continue baking for 10 additional minutes or until cheese has melted.
