Eat Well Wednesday: Another Slow Cooker Supper

Yes, another slow cooker recipe. Wondering why would we do that? We are featuring slow cooker recipes because we received feedback that many people love to use their slow cookers, but they need new recipe ideas. With the cooler temperatures, and busy fall schedules back in full swing, this is the perfect time to fall in love with your slow cooker all over again! This week’s featured recipe comes from the California Raisins website, which I highly recommend taking a look at. They have a fantastic recipe library featuring everything from main dish recipes to delectable desserts! Amongst there many raisins recipes you will find a helpful guide by category, making it easy to quickly find Kid Friendly, Gluten-Free, or Low Fat options, depending upon your preference.

Lightened Up Pulled Pork for Slow Cooker

Serves:  12 wraps


2 lb. lean, boneless pork loin roast

1 Tbsp. Chile Powder

2 ¼ tsp. ground cumin

1 ¼ tsp. crushed oregano leaves

1 ¼ tsp. ground cinnamon

1 ¼ tsp. salt

1 can (28 oz.) crushed tomatoes

1/3 cup (fresh) lime juice

1 medium chopped onion, divided

3 cloves garlic, minced and divided

1 ½ cup California raisins

5 dried ancho/Poblano peppers; stems and seeds removed, torn into strips

12 large tortilla wraps (preferably whole grain)

Preparation: Trim fat from pork and cut into 2-inch cubes. Stir seasonings together in small bowl; sprinkle over pork, turning to coat all sides. Heat tomatoes, lime juice, 1 onion and 1 clove garlic in large slow cooker; top with pork and raisins. Cover and cook on high for 5 hours or on low for 10 hours. Remove pork with a slotted spoon to large bowl; keep warm. Pour juices from slow cooker into medium saucepan. Add remaining onion, garlic and dried peppers. Bring to boil; reduce heat and simmer for 20 minutes, stirring occasionally. Let cool slightly; then, purée in blender or food processor. Shred pork using 2 forks and stir in half the sauce. Divide and spoon onto tortillas; garnish with avocado, cilantro and remaining sauce.
