Eat Well Wednesday: A New Twist on an Old Favorite

It is no surprise that “Back to School” is a popular topic right now. I thought I would jump on the band-wagon and make that the focus of this weeks “Eat Well Wednesday” blog too. For many parents, back to school means back to packing lunches. Here is a new twist on an old favorite – the PB&J revisited! Don’t get me wrong, I enjoy a good spread of jelly or jam from time to time. However, if peanut butter & jelly sandwiches are a common entrée in your students bag (or in your own lunch for that matter), this trade up using real fruit may be of interest. Real fruit scores in the 90’s compared to <5 for most jams and jellies.

Ingredients:

1-2 Tbsp. Nut butter (like peanut butter or almond butter)

¼ tsp. pumpkin pie spice or cinnamon (optional)

Thinly sliced fruit or your choice (such as pear or banana)

1-2 slices of whole grain bread

Directions: If using a spice to enhance the flavor, mix nut butter and spice together. Spread evenly on both slices of wheat bread, top with sliced fruit and fold sandwich together. These sandwiches are also great on toasted bread. Pair with one cup of baby carrots and skim milk for a well-rounded lunch that will keep your student full and focused throughout the day!
