Eat Well Wednesday: A Family Friendly Dinner!

Children are often fussy eaters (this is a normal part of growing), which can make introducing new, healthy foods a challenge.  This week we’re helping you introduce brown rice with this child-friendly recipe, which adds a healthy whole grain into a casserole with familiar flavors that kids already love!  We used NuVal® to find higher scoring (and therefore, more nutritious) ingredients as well to make this cheesy chicken dish a better-for-you version of the original. Another way to get children to try new foods is to get them involved in the kitchen (where it’s always nice to have an extra set of hands!).  Let your little ones crush the chips to top the casserole or stir together the chicken, cheese and wet ingredients before the saucepan hits the hot stove.  Older children can assist with mixing in the rice or preparing a vegetable side dish (click here for some ideas!).  Get the whole household involved, and have fun preparing this family-friendly dinner tonight!

Cheesy Mexican Chicken

Ingredients:

2 cups cooked Dad’s Plain Chicken Breasts (about 2 breasts)

1 cup skim milk

1 packet (1.25 oz.) McCormick taco seasoning mix

1 cup shredded Crystal Farms Cheddar Cheese

1 cup Minute® Brown Rice, uncooked

1 can (10 ¾ oz.) Campbell’s Fat Free Cream of Chicken Soup

1 cup Old Dutch Multigrain Restaurant Style Tortilla Chips, crushed

Directions:

  1. Preheat oven to 375°F.
  2. Mix chicken, soup, 3/4 cup cheese, milk and seasoning mix in a medium saucepan. Bring to a boil. Remove from heat and stir in rice. Pour into 2-quart baking dish. Top with chips.
  3. Bake 15 minutes. Remove from oven and sprinkle with remaining 1/4 cup cheese.
