Double Chocolate Zucchini Bread #festfoods The only thing that can make chocolate even better is having the word “double” in front of it. And, let me tell you, this recipe is double chocolate heaven. Plus, it’s zucchini bread. Veggies, chocolate, dessert, oh my!

 

The hidden star of this show is fresh zucchini, which is abundant this time of year. Finding new recipes to use zucchini in is always good news, and as a dietitian, I love sneaking veggies in whenever possible. We are also using whole wheat pastry flour, which gives us a lighter-textured bread with all that whole grain goodness. Oh, and of course we use Hershey’s® Special Dark Cocoa Powder, because even though I love my veggies, I am still a chocoholic. Double Chocolate Zucchini Bread #festfoods While your oven is preheating to 350 degrees, grease and flour an 8 x 5 inch loaf pan. This part is important to make sure the bread looks perfect when you take it out of the pan, and won’t get stuck to the sides. Double Chocolate Zucchini Bread #festfoods Next, we are shredding 2 whole zucchinis. I used a food processor here, but a good old fashioned cheese grater does just fine! In a large bowl, cream together butter, oil and sugar until the mixture is light and fluffy, then beat in the eggs one at a time until completely combined.  Stir in the cocoa powder, vanilla extract, salt and baking powder. Fold in the grated zucchini, and then add the flour and ½ cup chocolate chips to the bowl.  Stir until just combined. Is there anything more wonderful than a mixing bowl full of rich chocolatey batter? I don’t think so. Double Chocolate Zucchini Bread #festfoods Transfer the batter to the loaf tin and spread out using a spatula or the back of a spoon.  Sprinkle some more chocolate chips over the top {you know, just for good measure}.  Bake for 45-55 minutes, until the bread has risen and a toothpick inserted into the center comes out almost clean. In the meantime, your house is going to smell like a chocolate dream. Double Chocolate Zucchini Bread #festfoods Once the bread is done baking, let it cool in the pan for 10 minutes before transferring to a wire rack to continue cooling. Double Chocolate Zucchini Bread

Ingredients:

¼ cup unsalted butter, softened

¼ cup canola oil

¾ cup granulated sugar

2 large eggs

⅔ cup dark chocolate cocoa powder

1 tsp. vanilla extract

¼ tsp. salt

2 tsp. baking powder

2 cups grated zucchini (about 2 medium zucchini)

1 ⅓ cup whole wheat pastry flour

½ cup + 2 Tbsp. dark chocolate chips  

Directions:

  1. Grease and flour an 8x5 inch loaf tin, then preheat the oven to 350 degrees.
  2. In a large bowl, cream together butter, oil and sugar until light and fluffy, then beat in the eggs one at a time until completely combined. Stir in the cocoa powder, vanilla extract, salt and baking powder.  Fold in the grated zucchini, and then add the flour and ½ cup chocolate chips to the bowl.  Stir until just combined.
  3. Transfer the batter to the loaf tin and spread out using a spatula or the back of a spoon. Top with 2 Tbsp. chocolate chips.  Bake for 45-55 minutes, until the bread has risen and a toothpick inserted into the center comes out almost clean.
  4. Let the bread cool in the pan for 10 minutes before turning out onto a wire rack to finish cooling.
