Eggs offer a nutritious, neutral base that are easily transformed into bite-sized treats with the help of a few simple ingredients! Curried Deviled Eggs | Deviled Eggs 3 Ways | Eat Well with Festival Foods

Curried Deviled Eggs

Ingredients:

  • 6 hard-boiled eggs
  • 2 Tbsp. mayonnaise
  • 1 Tbsp. nonfat plain Greek yogurt
  • ½ tsp. curry powder
  • ½ tsp. cumin
  • ¼ tsp. celery salt
  • Red grape slices for garnish

 

Directions:

  1. Peel eggs and slice in half, lengthwise. Carefully remove yolks and place into a small bowl. Mash yolks with the back of a small fork.
  2. Add mayonnaise, Greek yogurt, curry powder, cumin and celery salt to yolks. Continue to mash until all ingredients are mixed well. If the yolk mixture seems too thick, add additional yogurt.
  3. Fill egg whites with curried yolk mixture. Top with a slice of red grape and serve.

Avocado Bacon Ranch Deviled Eggs

  Ingredients:

  • 6 hard-boiled eggs
  • 1 avocados, peeled and pitted
  • 1 Tbsp. + 1 tsp. ranch dressing
  • 2 tsp. nonfat plain Greek yogurt
  • 2 green onions, chopped
  • Pinch of salt
  • 3 slices cooked Godshall's turkey bacon
  • 3 Tbsp. diced tomato

 

Directions:

  1. Peel eggs and slice in half, lengthwise. Carefully remove yolks and place into a small bowl. Mash yolks with the back of a small fork.
  2. Add ranch, Greek yogurt, green onions, avocado and salt to the yolks and continue mashing with the back of a fork until all ingredients are mixed well. If the yolk mixture seems too thick, add additional yogurt.
  3. Fill egg whites neatly with the yolk mixture. Top with bacon crumbles and diced tomato.

Greek Deviled Eggs

Ingredients:

  • 6 hard-boiled eggs
  • ⅓ cup + 1 Tbsp. hummus
  • 2 Tbsp. olive oil
  • 2 tsp. snipped oregano
  • ¼ tsp. ground black pepper
  • ¼ tsp. salt
  • Halved Kalamata olives, feta and oregano for garnish

 

Directions:

  1. Halve eggs lengthwise and remove yolks. Set whites aside.
  2. Place yolks in a small bowl; mash with a fork. Add hummus, olive oil, oregano, pepper and salt.
  3. Stuff egg white halves with yolk mixture.
  4. Top with olives, feta and snipped oregano

 

Yield: 12 Deviled Eggs
