I’m just going to throw it out there right off the bat.  These Dark Chocolate & Raspberry Almond Butter Bars are incredibly rich and delicious, like fudge, which makes them #1 in my book.  And I don’t think I’ve shared with you my obsession with almond butter at this point, but it’s time I tell you that I am crazy for it.  Like, slather it on my banana every morning and eat it with a spoon obsessed.  Yep, that’s me. So now that I’ve shared that, I can tell you about the other fun ingredients in these bars {erhm, fudge}.  Dark chocolate -- yep, amazingly bitter, yet slightly sweet.  Raspberries-- perhaps one of my absolutely favorite fruits.  Almonds – adds that crunch and nuttiness.  And honey -- for a touch of sweetness and flavor depth.  Can you say YUM?!

Dark Chocolate & Raspberry Almond Butter Bars

Oh, these bars are also embarrassingly simple.  And I mean, SIMPLE!  Let’s get started, and you’ll see. The first step is to line a pie plate with a piece of parchment paper, and then we are going to work in layers. Layer 1 -- Drop in the fresh or frozen raspberries and slivered almonds to make the first layer. Layer 2 -- Microwave the butter and dark chocolate peanut butter in a large glass measuring cup for 60 seconds, until melted.  Whisk in cocoa powder, 2 tablespoons honey, ½ teaspoon vanilla and a pinch of coarse salt.  Taste mixture and adjust, if necessary.  Pour mixture over the berries in a pie plate. Layer 3 -- Whisk together the almond butter, half & half, remaining honey, remaining vanilla extract and a pinch of coarse salt in the glass measuring cup and microwave for 30 seconds.  Pour over chocolate mixture and swirl with a knife or spoon.  Top with dark chocolate chips, if desired. {What a silly thing to say-- dark chocolate chips are ALWAYS desired.} Dark Chocolate & Raspberry Almond Butter Bars

Freeze for at least 30 minutes, or until the block is soft but almost frozen.

Remove from the pie plate and cut into wedges and serve.  {TIP: If it’s too hard to cut, allow to sit on counter for 5-10 minutes, then slice.}  And there you have it.  One of the easiest, and most delicious, desserts you’ll ever have! Dark Chocolate & Raspberry Almond Butter Bars

Ingredients:

  • 1 pint fresh raspberries, washed
  • ½ cup slivered almonds
  • ¼ cup salted butter
  • ¼ cup dark chocolate peanut butter
  • 2 Tbsp. dark chocolate cocoa powder
  • ½ cup honey, divided
  • 1 tsp. pure vanilla extract, divided
  • ½ cup almond butter
  • 2 Tbsp. fat free half & half
  • 2 Tbsp.  dark chocolate chips {optional}  

 

Directions:

  1. Line a pie plate with parchment paper or foil. Arrange the raspberries and almonds in a single layer.
  2. Microwave butter and dark chocolate peanut butter in a large glass measuring cup for 60 seconds, until smooth. Whisk in cocoa powder, 2 tablespoons honey, ½ teaspoon vanilla and a pinch of coarse salt.  Taste mixture and adjust, if necessary.  Pour mixture over the berries in the pie plate.
  3. Whisk together the almond butter, half & half, remaining honey, remaining vanilla extract and a pinch of coarse salt in the glass measuring cup and microwave for 30 seconds. Pour over chocolate mixture and swirl with a knife or spoon.  Top with dark chocolate chips, if desired.
  4. Freeze for at least 30 minutes. Remove from the pie plate and cut into wedges and serve.  Store in an airtight container in the freezer.
