Monroe-based Emmi Roth USA is uses "local milk from local farms" in its award-winning cheeses and that's just one of the many reasons we love carrying this product in our Deli's gourmet cheese selection.
The company uses two co-ops in Wisconsin to supply the milk for its cheese. "We believe in sustainability of farming and we work to ensure proper love and caring for our cows who give us such great milk," according to the company. Emmi Roth's associates use Swiss traditions at their cheese making facility in Monroe, Wisconsin.
That company's "chateau plant" there can craft 20 different varieties of cheeses and it also has a separate facility in Platteville. You may have heard of Roth's Grand Cru cheese, which is made using the same practices used in Gruyere production in Switzerland. That means using a copper kettle in production and then aging the cheese on wooden planks and washing the rinds to ensure it's aged to perfection when it's released.
The company says "at Emmi Roth, it's about quality in everything that we do." That includes its efforts to provide cheese pairing details as well as recipe options for its cheese.
