Well, hello again! How are you? Since we last talked I’ve been eagerly setting out Fall-themed decorations around the house, crunching through the piles of leaves that have accumulated on my sidewalk and driveway, and incorporating the flavors of my favorite season into pretty much everything I eat! What are you doing for Fall fun? Let us know! Keeping with my enthusiasm for this crunchy-leaves, sweater-weather, Friday-night-lights time of the year, I found myself drawn to this delightful four-ingredient dish! Easy to make, quick to throw together, and easily customizable, this meal fell right into my Fall themed plans (pun intended). Crunchy cabbage and lean ground turkey are mixed together with a sweet sauce compliments of Campbell’s® new line of Skillet Sauces and tossed into a whole grain pita pocket. To make this tasty treat even more Fall-esque, you could add slivered almonds and a handful of sweet dried cranberries to the mix, which is exactly what I’ll do when I make this again for supper! This dish is so simple to make, and clean-up is a breeze! First, you brown up one pound of lean ground turkey breast in a medium sized skillet. Next, add one package of Campbell’s Toasted Sesame Skillet Sauce to the ground turkey, bringing to a boil. Reduce the heat and simmer for 5 minutes, stirring often. This sweet sauce adds a ton of flavor with such little effort! Perfect for any night of the week! Once the sauce has simmered, stir in 3 cups of shredded cabbage (a coleslaw mix works splendidly for this!). If you’re using slivered almonds and dried cranberries (which I completely recommend you do!), this would be the time to stir them in also. I recommend anywhere from 1/4-1/2 cup of each, depending on preference. Finally, fill your pita pocket to your heart’s content! These are great to take with you outside (maybe for a quick lunch break while raking leaves?) or to enjoy with a warm cup of apple cider on a chilly Fall afternoon! Crunchy Turkey Pita Pocket
- 1 lb. ground turkey breast
- 1 pkg. Campbell’s® Toasted Sesame Skillet Sauce
- 3 cups coleslaw mix
- 6 whole wheat pita pockets
- Cook turkey in a large skillet over medium-high heat until the meat is browned and cooked through.
- Add skillet sauce; bring to a boil. Reduce heat and simmer for 5 minutes, stirring often.
- Remove skillet from heat, and stir in coleslaw mix.
- Fill each pita pocket evenly with turkey mixture. Serve immediately.
Tip: To add seasonal flair, stir in sweet dried cranberries and crunchy slivered almonds right before serving!
