It’s hard to believe, but in just a few weeks, the new school year will be in full swing. Before we get into the hustle and bustle of back to school, how about we take time to indulge in one last decadent dessert? This recipe uses some unique ingredients like coconut butter and cashew milk, but it’s very easy to make, and creates a rich and creamy dessert that also happens to be gluten free and dairy free! This first step requires the most patience, but it’s also the easiest. Place cashews in about 2 cups of water and soak for 2-3 hours. This helps to soften the cashews for the blender stage. Drain the cashews after soaking. In a blender, add the soaked cashews, coconut butter, vanilla extract, honey, milk and coarse salt. Coconut butter is different from coconut oil due to the fact that coconut butter contains the meat of the coconut, which gives it its creamy texture. You can find varieties of coconut butter in the Natural and Organic department at Festival Foods. Once we’ve filled our blender with ingredients, puree the mixture until very smooth. Definitely taste it at this point, and adjust ingredients as necessary. Pour this pre-pudding blend into a bowl with a lid and refrigerate for at least 2 hours. And that’s it! Once the pudding is set, scoop it into bowls and top with shredded coconut and chopped cashews. Send off summer in a sweet and smooth style!
Coconut Cashew Pudding

1 cup raw cashews
¼ cup coconut butter
2 tsp. honey
1 tsp. vanilla extract or vanilla bean paste
1 cup coconut, cashew or almond milk
Pinch of coarse salt
Coconut and/or chopped cashews, for garnish
- Soak cashews in 2 cups of water for 2-3 hours.
- Place soaked cashews, coconut butter, vanilla extract, honey, milk and salt in a blender. Puree until very smooth.
- Place in a bowl with a lid and refrigerate for at least 2 hours.
- To serve, place in 3 bowls and garnish with coconut and chopped cashews.
