Adapted from the Whole Grains Council

Ingredients:

  • 1 cup barley
  • 3 Tbsp. fresh lime juice
  • ⅓ cup olive oil
  • ½ tsp. ground cumin
  • Salt and pepper, to taste

  2. While barley is cooking, whisk together lime juice, olive oil, cumin, salt and pepper.
  3. In a large bowl, toss arugula with half the dressing.
  4. When barley is done cooking, drain off excess liquid.
  5. Add cooked barley, jicama, pineapple and avocado to the arugula. Drizzle on the remaining dressing and toss gently to combine.
